SimpleJdbcOperations#queryObject...最後のパラメータとしてを取ります。これはメソッドによって説明されていないためにエラーが発生します。これは、説明されていwithないこのメソッドに空の配列を渡すためにコンパイルされるためだと思います。

使用すれば動作します、

allowing(jdbc).query(with(equal("SELECT Name FROM Customers")), with(any(RowMapper.class)), with(equal(new Object[0])));
will(returnValue(Arrays.asList("Bob")));
