バージョン 4.0 以降 (現在 CRAN で利用可能)、引数 header=FALSE を指定して stargazer を実行し、Latex コード出力の最初のコメントを省略することができます。

出力を直接変更することもできます

mod_stargazer <- function(...){
  output <- capture.output(stargazer(...))
  # The first three lines are the ones we want to remove...
  output <- output[4:length(output)]
  # cat out the results - this is essentially just what stargazer does too
  cat(paste(output, collapse = "\n"), "\n")
}
